Chocolate Sheet Cake
2 cups sugar
2 cups flour
2 sticks margarine (or butter)
1/2 cup oil
1 cup water
8 tablespoons cocoa powder
2 eggs
1/2 cup buttermilk
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
7 tablespoons milk
1 pound box confectionary sugarSift together 2 cups sugar and 2 cups of flower. Set aside.
Bring to a rolling boil: 1 stick margarine, 1/2 cup oil, 1 cup water, 4 tablespoons cocoa powder. Add to first mixture and blend well.
Add 2 eggs, 1/2 cup buttermilk, 1 tsp cinnamon, 1 tsp soda, 1 tsp vanilla and pour into a greased and floured cookie sheet (with at least a 1" lip on all four sides!). Bake at 400 fir 25 minutes.
ICING:
Bring to boil: 1 stick of margarine, 4 tablespoons cocoa powder, 7 tablespoons milk, mix with one pound of confectionary sugar. Beat until smooth.
Ice the cake IMMEDIATELY upon taking it out of the oven by pouring the icing mixture over the cake.
Optional: You can add nuts to the icing before or after icing the cake.
